【团体标准】 白酒酿造用高粱原料管控技术规范

该标准规定了白酒酿造用高粱原料的品种、种植、加工、验收、运输与贮存等管控要求。品种需选适宜酿造的红缨子等，淀粉≥60%、单宁＞0.5%，分大小颗粒及粳糯类型。种植管控含产地环境（土壤、空气、灌溉水）、栽种、施肥、水分、病虫害防治及采收要求。加工处理涉及清理除杂、粉碎（分香型定粒度）、润粮、蒸煮糖化等。验收含感官、理化、卫生安全指标及检验方法，不合格品有对应处理措施。运输与贮存规定了条件、监控及信息管理等。Thisstandardstipulatesthecontrolrequirementsforthevariety,planting,processing,acceptance,transportation,andstorageofsorghumrawmaterialsusedinthebrewingofBaijiu.ThevarietyshouldbeselectedfromsuitablebrewingsorghumsuchasHongyingzi,withstarchcontentof≥60%andtannincontentof>0.5%,anditshouldbedividedintolargeandsmallparticlesaswellasglutinousandnon-glutinoustypes.Plantingcontrolincludesrequirementsfortheproductionenvironment(soil,air,irrigationwater),planting,fertilization,watermanagement,pestanddiseasecontrol,andharvesting.Processinginvolvescleaningandimpurityremoval,crushing(withparticlesizedeterminedbyflavortype),grainmoistening,steaming,saccharification,etc.Acceptanceincludessensory,physicochemical,hygieneandsafetyindicatorsaswellasinspectionmethods,andtherearecorrespondingmeasuresforhandlingnon-conformingproducts.Transportationandstoragestipulateconditions,monitoring,andinformationmanagement.
